Bordeaux
La qualité du raisin résulte de l'interaction de 4 facteurs : le site, le climat, la nature des sols, l'encépagement. Les vins de Bordeaux proviennent de raisins de très grande qualité, soigneusement vinifiés. L'interaction du climat et des différents sites (pente, exposition, topographie générale) existants dans le bordelais forme des microclimats très localisés et très nombreux en Gironde. Ces microclimats en relation avec les différentes natures de sols, définissent de véritables milieux environnants pour la vigne, d'étendue limitée, et appelés terroirs. La qualité de ces terroirs s'exprime au travers des potentialités qualitatives des différents cépages, et donne ce que l'on appelle communément dans le bordelais, des Crus. Le terme de Cru, que l'on retrouve souvent sur l'étiquette d'un vin de Bordeaux, (Cru bourgeois, Cru classé) témoigne de la qualité des terroirs et cépages de l'exploitation, et du savoir-faire du vigneron.
